I baked a few cupcakes for a friend today, and boy it was delicious! (made a few extra for myself heehee.) she spcifically wanted hazelnut, peanut butter and chocolate banana, which is totally my favorite! and to make things a little more adorable, i added fondant ribbons on top! And because of a nutrition exam tomorrow, i'm gonna let the photos do most of the talking today! courtesy of mr. boyfriend and his awesome nikon D300. (:

Awesome chocolate banana cupcakes (makes about 18 cupcakes)
-225g caster sugar
-225g self raising flour
-225g butter
-4 eggs
-1 tsp vanilla extract
-4-5 tbsp cocoa powder (if you like it thicker, go ahead and add a few more tsbp!)
-1 banana, chopped into quarters
-1-3 tbsp of milk (for your mix when it gets too dry)
-Preheat oven at 175 degrees
- Whisk butter and sugar together till it's light and fluffy
- Add in vanilla essence and eggs bit by bit and whisk on low speed until you get a thick consistency

- Add in flour bit by bit too and whisk.
- Add in the cocoa powder into the mix. if the mix is getting too dry, add a few tbsp of milk to keep it moist. your mix should be really thick and gooey after that.
- Scoop half a tablespoon of mix into the cupcake mix. After that, add in chunks of banana into cupcake tins before covering it with another tablespoon of mix.

- Put cupcakes in the oven for 20-25 minutes until it's springy when you touch them. you can use a skewer if you have one, or a short satay stick.
