a HUGE hiatus.
I'm so sorry my fellow readers. I've been on a hiatus for a long long time. I've been really busy with school, and really have not much time to update really. Maybe partly because of my lack of tech-savvy bug inside me. Despite my always on going quizzes and exams in school, i managed to still do up a few baking goodies, but none to my expectations really. I think this is why i'm not really blogging much too actually. It doesn't feel as fulfilling anymore, the excitement, the anticipation, the sense of achievement. Now its only disappointment, worries and really not much happiness anymore. I don't know what had happen, but I'm not gonna let it get me. I'm gonna start afresh again soon hopefully, and make myself really happy with what i enjoy doing most. So in the meantime, please don't forget about me completely. I'll be back!

it's summer!
yes yes another two tier cake order for my dear friend shyanne and her theme was summer! This time she gave me a more difficult task- fondant and flowers.
So she requested for a rainbow interior with fresh flowers on top of the cake. Besides the cake, there was another 21 cupcakes to prepare and 60 cake pops on a flower vase. Because i was so frantic and excited over the cake, i totally forgot to snap some photos of the cake pops and cupcakes. And all the photos from this post was from my helpful iPhone. Indeed, iPhone did not let me down.
Yeah, as you can see there are still many (and i mean really MANY) flaws on the cake (gah!). it started to shaw lines and cracks once i lay the fondant and started to "sweat" a little. i was panicking and even resort to switching on my fan to cool it down. well, i don't really know the answer to it but my guess would either be that Singapore is too humid, or that the buttercream was too chilled ( i put it in the freezer thinking it would set faster) and it condensed too quickly that's why. it was again a little uneven but so much better than the previous time. just a tiny wee bit. but fondant was a pain that day. maybe i wasn't doing it right. blah. more practice i say!

i found a unicorn.
hello there! its been kinda mundane over here for about a couple of weeks now due to school work and inevitable stress. I finally cleared all my test and assignments and did this beautiful cake for my girlfriend Ong last week! Her birthday theme was rainbow, so of course a rainbow cake is a perfect choice for the occasion!
Actually, this is my first time making a two tier cake and it's the biggest task i have ever taken! I'm not gonna lie, it was really madness having to measure and bake each layer at a time and finding out that i do not have enough cake batter to bake the layers. grrr bummer. This also applies to the buttercream i needed. After crumb coating and everything, i realise the major issue with the cake. IT WAS A LITTLE UNEVEN.
Oh gosh.
I sat on the chair looking stunned for a good 5 minutes. but oh well, i manage to get the hang of things slowly and i'm glad the cake turn out reasonably pleasant at least. This calls for more practice haha.
I didn't manage to take a photo of the interior of the cake cause everyone was scrambling to help distribute and cut the cake and it slipped my mind to snap a photo with my phone. but the interior looked something like this:

Ta-dah! I'm really glad Ong and her family loved the cake despite it's flaws (uneven cake. unforgivable gah!). and I was really really really relieved the cake looked reasonable presentable. More practice definitely i must!

when the sun goes down.
I baked a few cupcakes for a friend today, and boy it was delicious! (made a few extra for myself heehee.) she spcifically wanted hazelnut, peanut butter and chocolate banana, which is totally my favorite! and to make things a little more adorable, i added fondant ribbons on top! And because of a nutrition exam tomorrow, i'm gonna let the photos do most of the talking today! courtesy of mr. boyfriend and his awesome nikon D300. (:

Awesome chocolate banana cupcakes (makes about 18 cupcakes)
-225g caster sugar
-225g self raising flour
-225g butter
-4 eggs
-1 tsp vanilla extract
-4-5 tbsp cocoa powder (if you like it thicker, go ahead and add a few more tsbp!)
-1 banana, chopped into quarters
-1-3 tbsp of milk (for your mix when it gets too dry)
-Preheat oven at 175 degrees
- Whisk butter and sugar together till it's light and fluffy
- Add in vanilla essence and eggs bit by bit and whisk on low speed until you get a thick consistency

- Add in the cocoa powder into the mix. if the mix is getting too dry, add a few tbsp of milk to keep it moist. your mix should be really thick and gooey after that.
- Scoop half a tablespoon of mix into the cupcake mix. After that, add in chunks of banana into cupcake tins before covering it with another tablespoon of mix.

marshmallows.
I have a very sudden craving for oreos these past 2 days, and remembered buying a packet last two weeks ago. Unfortunately, I have a brother at home who believes he's still in puberty at the age of 18. Thus, my packet of oreo is perished into his tummy long before i find out. prrffft. So i decided to satisfy my oreo cravings with a little twist to it. mmmmmm.....
yes i've added marshmallow on top to make it look fluffy and adorable. I know, the guilty pleasures of it. But don't you think they look extra adorable with the ribbonssssss? (:
Wholesome goodness. Now i can go to school in peace, with my tummy feeling VERY satisfied.

hot hot hot.
It's been really really REALLY hot these few days on sunny island, and i cannot stand the intense heat not even for 5 minutes out and about. it burns your skin and make your perspire like a tap. so much for showers. prfft.
Anyways, these cupcake photos are quite overdue but i thought i'd share it with you guys! I happen to have peanut butter at home and decided to make peanut butter cupcakes with vanilla buttercream. I tried a different decoration for the buttercream and it was my first time piping flowers with a rose tip! At first i thought it was gonna be an utter disaster, but i guess it turn out kinda alright for a first timer like me. phewww.
And and! this photo above is actually the icon at the top of flawed bakes website! looks kinda different aye. all thanks to tee ming!
I also made a small batch of fondant cupcakes for my friends Leen and Yao. It was their big 21st and i thought it'll be nice to give them some adorable looking cupcakes as presents.
Doesn't the colour combination reminds you a little of Hello Kitty? haha.
Peanut Butter Cupcakes (makes about 15-18 cupcakes)
- 225g Butter
- 225g self-raising flour
- 225g caster sugar

Milestone.
Hello strangers! i finally got a blog up to update on my baking adventures! *pop confetti* There are still some amendments to be made, but i'm too excited to wait, thus for this entry (whoops!). Anyways i'm kinda new in the baking cyber world so please bear with some of my antics yeah haha. Oh yes and i have to thank my awesome friend Tee Ming for coming up with such a lovely layout for the blog! shall pass you some sweet treats the next time i see you!
I shall share a recipe for the first entry then!
This recipe came out from nowhere (at 2am actually), and i have to thank my insomnia sleep bugs for it. Being a teen, sleeping hours can be so exaggerating which last to a maximum of 12 hours. i was sleeping like a log for a week straight and finally it got in my head that i sleep too much. so i started my healthy lifestyle plan, which apparently only lasted me for a few days haha!
Okay so back to this lifestyle plan, i was trying to sleep at 11pm and wake up at 9.30am to readjust my body clock. i lay wide awake for 2 hours straight and gave up. Thus, i turn on the television and Rachel Allen's Bake! was on TLC. Awesomeeeee. Then she was teaching how to make these beautiful blondies in a quickie.
Blondies are actually brownies, but in a paler colour like white. Although the recipe is called White Chocolate Blondies, I added chopped peanuts into it due to the special request from my dad. he LOVES nuts of all kind, which explains the many different containers of nuts i have on my dining table. Fortunately he loves it! So did everyone else whom i offered them to. yay.
White Chocolate Blondies (Adapted from Rachel Allen's Bake! on TLC)
100g butter
150g peanut butter
1tsp vanilla essence
175 sugar
1 egg
75g white chocolate chopped (I used bakeable white chocolate chips since i have it at home)
75g chopped peanut (optional: if you like a little more crunch in your blondies, like my dad)
125g sifted plain floour
1tsp baking soda
- Whisk butter and peanut butter till light and well mixed.
- Add in the sugar (in small batches at a time), vanilla essence and egg till it is well combined together
- Stir in the white chocolate and chopped peanuts( if you opt for it in the recipe) till it is well mixed.
- Lastly, fold in your sifted flour together with the baking soda until your batter becomes well combined. It should look sticky.
- Bake in the oven for 25- 30 minutes till it turns golden brown. i used a skewer to poke and check just to make sure it's done (:
